According to the editors at Cook's Illustrated , you want the foil to be tight enough that moisture can't get out, but be sure not to crimp the edges shut; that way, ethylene gas, the hormone that causes fruits and vegetables to ripen, can escape.

Stalks of celery cut into smaller pieces can also keep well, especially when "submerged in water in a tightly covered container," according to the Washington Post.

However, the folks at Cook's Illustrated note that the water isn't strictly necessary in keeping pieces of cut celery crispy, as long as the container is air-tight. But either way, these smaller sticks of celery will "very slowly deteriorate," and you can prep them up to two days in advance of eating or use. Although it does not retain its crunchiness, its flavor remains intact all year long.

When storing herbs like basil and celery, make sure to keep them away from strong-scented vegetables like onions as they can affect their taste. Once you get celery from the grocery store, always keep it refrigerated as it goes limp faster at room temperature.

Frozen celery can stay fresh for months or even a year depending on how you freeze it. You can choose to freeze celery raw or cooked blanched.

Raw frozen celery will not be of good quality in terms of texture and color and can only keep fresh for two months before it starts to get mushy. On the other hand, blanched celery will keep fresh throughout the year retaining its flavor. Apart from these preservation methods, you can dry your herbs in a dehydrator and keep them as spices for long-term use. Cut celery, whether leaves or stalks, will lose water at a high rate than when still intact. As such, the sticks will not remain fresh for long if not stored properly.

To store cut celery in the fridge, submerge the cut stalks in water in an airtight container and place them in the refrigerator.
